Hi brewers, I have translated a Korean farm recipe for Nuruk that I’d really like to try. I don’t have anyway to get either rice straw or Corn straw. Could corn husks work? I have homemade Tempeh starter as well which grows Rizopus mold. I’m thinking of adding a little bit, I don’t want it to over power wild yeasts etc. what do you think? I also have read that Koreans have also started adding Mung beans to pump up the Lactic acid in their Nuruk so I may add some cooked Mung beans as well. I’d appreciate your thoughts. Thanks
