Easily one of the most common questions that come up time and time again, is 'When do I filter?'.  For us, filtering is a very personal choice and it really depends on what kind of result you're looking for.  Early filtering usually ends up with a lighter, more carbonated and acidic brew, whereas later filtering has a more smooth and often sweeter balance.  

That being said, a lot of brewers that brew regularly will have their preferred filtering times, whether it be 7 days or three weeks.
